Unlike jaggery powder, it has a lighter colour and more neutral flavour profile, making it suitable for a wider range of formulations.
Is it suitable as a 1:1 replacement for refined sugar in formulations?
Sugarcane powder can substitute refined sugar on a 1:1 ratio by weight in most applications. The slight molasses flavour may be perceptible in light-flavoured products — formulation testing is recommended.
