Dehydrated guava powder retains a proportion of the natural pectin present in fresh guava. However, the pectin content and gelling performance in guava powder is significantly lower than isolated commercial pectin (such as citrus or apple pectin). It is suitable as a natural flavour and partial texture contributor in jam and preserve formulations, but should not be relied upon as the primary gelling agent. For applications requiring defined gel strength, supplement with commercial pectin to achieve your target texture.
Can guava powder be used in beverage applications for natural tropical flavouring?
Yes. Guava powder dissolves readily in water at typical beverage formulation temperatures. It provides a natural tropical guava flavour and aroma at use levels of 1–5% in powdered drink mixes and 0.5–2% in ready-to-mix beverage concentrates.
